Best Comfort Food Recipes for the Fall

I’ve written a lot recently about cooking up a storm once the weather begins to get chilly.  I love when the whole house fills up with the comforting smells of a good home cooked meal.

With 3 kids and a husband to feed, I try to make food that everyone enjoys. I tend to gravitate towards recipes that are satisfying for a cold day and easy to make. It’s the only way I get ambitious enough to do some cooking.  I don’t love cooking as much as I wish I did and so when I make the effort, I want to cook a recipe with enough servings so there are leftovers.  That way, all that hard work doesn’t disappear completely by the end of a meal.

Below I have included links to a few recipes that have become family favorites.  I am not a gourmet cook and stick to easy to make items with ingredients that are usually already in your pantry.  I hope you enjoy!

Chicken Salad with Cranberries and Pecans - from 300 Sandwiches.  I’ve had to make a double recipe of this dish several times because the whole family enjoys it so much.

Chunky Applesauce - from Williams and Sonoma.  This applesauce is so good, my husband wants me to try to make a pie and use it for pie filling. (I’m not ready to get into pie making yet).

Potato Corn Chowder - from Taste of Home.  This is by far the easiest soup to make.  It has few ingredients, but it makes the very best soup!

Lentil Bowl - from Family Circle.  This is the healthiest recipe I’ve probably ever made.  The best part is it went over well with the family.  It has acorn squash in the lentil bowl which makes it perfect for the fall.

Easy Microwave Fudge - from Tip Hero.  This is a 2 ingredient 1 minute to make fudge and it’s excellent!  The trick is to use the very best chocolate chips you can afford.  The consistency comes out perfectly after refrigerating for 2 hours and it’s a perfect gift for the holidays.

Coq au Vin - from Better Homes and Garden Ultimate Slow Cooker.  Absolute best comfort food meal for a cold or rainy day!

Butternut Squash and Carrot Soup - from Better Homes and Garden.  Satisfying soup best eaten with a crusty loaf of french bread and side salad
